There isn't an app in Articulate 360 that will allow you to record on your iOS mobile devices, but there are a bunch of other tools out in the market to do so.
Look for any of the apps offering a screen sharing or "reflector" of your iOS devices onto the desktop computer. Once you have that set up you could use Storyline to record your desktop screen (which is displaying your iPad screen).
There may also be native mobile apps to record what you're doing within the app and send that to your desktop to insert into Storyline.
