I may be utterly blind but I cannot find where I can change the font and color for all the generated caption boxes in a software simulation in one go. Surely I'm not supposed to format paint every single one of them?
I ran into a similar thread recently, and after testing it a few different ways they don't pick up the theme defaults. So you'll need to format paint them. I'd suggest a feature request for this one.
After some additional testing, I found that if I changed the theme color (Accent 1) after inserting my screen recording I was able to update the color of the caption box (not the gradient though), and changing Text/background Light 1 will update thefont color for all my screen recording captions in that file. I also just learned that you can update the existing font styles by usingthe Translate option to export them » update the fonts in Word then re-importthem back into SL. Learn something new every day.

Don't they pick up the theme defaults? So if you adjust the colours in your slide masters and save the theme they'll pick up the new settings.
