Although I don't believe that you can switch the Play/Pause and Seekbar controls on and off just for individual videos, what you can do is to switch them on and off for individual slides. This then gives you an option to only show them for the slides where video will be shown.
What you need to do is to go to Story View, select all the slides you wish to change, select Slide Options at the bottom right of the screen, select "Custom for the selected slides" in the Player Features and then deselect the Seekbar option This will also remove the Play/Pause controls:
