By "sidebar" do you mean the menu on the left-hand side? You can disable this for the quiz slide, itself and leave the menu for the other slides in your course.
To do this, open the slide that contains your quiz. On the lower right-hand corner of the window, you'll see the layers for the quiz. On the very bottom (or first) layer in the list, click on the little cogwheel to the right. Under "Player Features" click on the drop-down menu and select "Custom for the selected slides". You'll see some additional options appear after making this change. Uncheck "Menu" or any other elements you want to hide on this slide and click "Ok". Preview your course to see how your quiz slide looks without the menu.
thank you for you quick response. That is exactly where I was playing around and discovered that I could not make the sidebar disappear completely if I have a logo present.
Thanks for getting back to me. I believe this is by design. If a Logo is enabled, it won't hide when the menu hides. But what about placing your logo on your Slide Master instead, so that it shows up on every slide, instead of on the left bar? This might work for your course. You'd also be able to "cover" it on your quiz slide, if you don't want it shown.
