As far as I'm aware, you can't set it as a default feature. However, you can set the styles in a master template and use the template to change text to the various headings/styles.
This thread is a bit dated and I'm not sure that Mike is still subscribed. There is not an option for the various headings in the text editor like you may see in Word, for instance.

Thanks Adhir, do you or anyone else know how to set the styles in the master template, I cant find a feature that lets you define H1, H2,. H3, etc?
