When the user clicks on the screen during the media (video) playing, the media (video) pauses however the seek bar continues to run. How can I stop the user clicking on screen and pausing the media (video)?
If you still don't want learners to be able to pause the video, but at least see the controls, you could always use Wendy's idea to place a transparent shape over the video.

Add a transparent shape (shape with a fill set to 100% transparency not no fill) over the top of the video
Thanks Wendy, that is an option.
I found adding 'Show Video Controls - Below Video' solved the problem and
was a little cleaner.

Sorry I thought from your description you didn't want them to have the ability to pause the video

Thanks for the replies, i just didnt want the user clicking on the screen
and pausing Happy for them to use the normal controls on the seek bar
