What's the simplest, classiest way to demo software that changes frequently?

I'm charged with creating demos of online software where the interface frequently changes. I often have to re-create videos to make sure I'm reflecting what the product looks like currently.  The client prefers video demos to text how-tos with screenshots. What have you all found is the simplest, classiest way to create videos that you know you're going to have to re-create?

Any screen capture utility with video ability works well. As Alexander mentioned, you already have Replay, and there are many other good ones available. Another inexpensive one is Snagit. I then use a combination of Premiere Pro and After Effects to touch up the video, and add any animations, highlights, text comments and etc., that I need. What software will work best for you depends on what will get the job done for you, what you are most comfortable using, and of course, maybe your cost.
