You'll find that callouts and captions are very similar in design! Callouts are best used to point out specific elements or features on a slide. For example, if I was creating a slide about the different parts of a car then I would use callouts to label the car door, steering wheel, tires, etc.
Captions are meant for short phrases or sentences! They offer more room to add longer text which could be used for long descriptions. Using the car example, I'd use captions for explaining the role of each car part.
