It sounds like your LMS may be placing the course in 'review' mode upon reaching the completion requirement so that the user doesn't inadvertently reset their score. You may want to look into the Moodle settings but there is also an option here you could change how the LMS behaves when the user is retaking the course.
I'm having the same trouble with quizzes from bank, i can make the student retake the quiz and the new score shows in the result page, but the LMS (moodle) just take the first try score.

thanks, I kind of resolved it with the article linked by Ashley, is not the best (manually change this setting) but it works "var REVIEW_MODE_IS_READ_ONLY = false;".
